Grilled cod with rhubarb salsa

Directions

Heat 2 tablespoons of oil in a frying pan and fry the onion, ginger and garlic for about 2 minutes. Then add the coriander and cumin powder and the red pepper and cook for 1 minute.

Add the rhubarb, sugar and vinegar and simmer for about 15 minutes until the rhubarb is soft. Season with salt and pepper and leave to cool.

Brush a grill pan with 2 tablespoons of oil and grill the fish fillets on both sides for about 5 minutes.

Serve the cod with the rhubarb salsa and sprinkle with the coriander.
