Directions

  1. Rub the slices of turkey fillet with some oil and sprinkle them around with salt and pepper.
  2. Peel the fennel with a peeler and cut the tuber into wafer-thin slices. Mix them in a bowl with the lettuce.
  3. Heat a grill pan and let the turkey fillet brown and cooked on both sides in about 8 minutes.
  4. Meanwhile stir together the sour cream, mayonnaise, lemon zest and juice. Season this sauce with salt and pepper and scoop it with vegetables.
  5. Divide the vegetables over 4 plates and sprinkle with the almonds. Place a slice of turkey breast on each mountain of vegetables and garnish smoked salmon with a nice curl.
