Heat the oven grill.

Beat the egg whites with the seasoning bitterly frothy and add in portions the icing sugar.

Whisk, as the mixture thick and firm, the cinnamon spices and cornstarch.

Halve the pears and remove the core. Cut each half a few times, but make sure the stalk remains intact.

Press the half pears open to fans and sprinkle with the caster sugar.

Heat the butter in a frying pan and fry the pears on a high setting on both sides quickly brown.

Spread over the plates and create a large spoonful of protein foam. If necessary, use the convex side of a spoon to make nice spots in the foam.

Put under the grill and let the protein light brown color. Serve warm.
