Puree 100 grams of the fruit with the lemon juice and strain it.

Collect the juice in a clean mixing bowl. Press as much juice as possible through the sieve with the convex side of the spoon.

Add the egg white and the sugar to the juice and beat with an electric mixer until it is a pink foam that stays in soft peaks. This can take up to 5 minutes.

Divide the rest of the fruit over 4 glasses and scoop the foam.
