Heat the butter and the oil. Sprinkle the hampen with salt and pepper and fry until golden brown on both sides.

Add the onion rings and thyme and cook for 2-3 minutes.

Stir the flour through the shortening. Add the apple juice, stock and mustard and bring to the boil.

Stew the dish gently for about 12 minutes with the lid on the pan.

Add the apple wedges, add an extra dash of apple juice or stock and add another 5 minutes. Season with salt and pepper.

Tasty with boiled potatoes and red cabbage.
