Heat the oil and fry the onions with the thyme on a low setting.

Heat a grill pan and fry the tarttails on a high setting in about 6 minutes until golden brown.

Fry the bacon in a dry pan.

Brush the buns with the mayonnaise.

Cover with the arugula, a tartar, the onion jam and the bacon.
