Heat the oil and fry the onions with the thyme on a low setting.

Add the vinegar and stir in the sugar.

Let simmer for about 20 minutes at a low setting until the onions are sticky and golden brown.

Allow the onion jam to cool and remove the thyme.

Heat a grill pan and fry the tarttails on a high setting in about 6 minutes until golden brown.

Fry the bacon in a dry pan.

Brush the buns with the mayonnaise.

Cover with the arugula, a tartar, the onion jam and the bacon.
