Make sure all ingredients are at room temperature.

Mix the eggs with 1-2 teaspoons of mustard and a pinch of salt in the bowl of a food processor or use a blender with a mixing beaker.

Beat everything light yellow and creamy. Add the vinegar (white wine) vinegar and, in a thin stream, gently add the sunflower or olive oil while beating (or while the machine is running).

If about half of the oil is absorbed and the mayonnaise thickens, you can add the oil a bit faster. Season with pepper.

Add the fresh green herbs (dill, chives, parsley and / or basil).
