Beet with balsamic vinegar and basil
A tasty side dish of beets with balsamic and basil.

Heat a frying pan without oil or butter and toast the pistachios for 4 min. On medium heat. Remove from the pan and allow to cool on a plate. Heel coarse.

Meanwhile, peel the beets, cut into thin parts and put into a deep bowl. Remove the leaves from the basil and tear into pieces.

Let the mozzarella drain, tear into pieces and spread over the beets.

Sprinkle with the balsamic icing and sprinkle with the basil, pistachios, pepper and salt.
