Herring tartar with apple and apfelkorn
A tasty Dutch recipe. The starter contains the following ingredients: fish, new herring, soft sour apple with red skin (Cox), lemon juice, spring onions, Apfelkorn (slijter), creme fraiche (125 ml), coarse mustard and freshly ground pepper.

Cut tails of herrings and cut herring fillets into tiny pieces.

Wash the apple, halve it and remove the cores.

Peel half of apple and cut into small cubes.

Sprinkle with 1 tablespoon of lemon juice.

Cut other (unpeeled) half into thin slices.

Sprinkle with the rest of lemon juice.

Clean the forest onions, wash and cut into thin rings.Into combine herring, apple cubes, 2/3 of spring onion, 2 tablespoons of Apfelkorn and 1 tablespoon of crème fraîche.

Stir in crème fraîche and Apfelkorn with mustard until sauce stirs.

Season with pepper.

From herring tartare with two spoons on four plates, each forming two beautiful mountains.

Divide the remainder of the forest onion.

Create the mustard sauce next to it.
