Honeycomb with strawberries
Honey omelets with strawberries, cream cheese and icing sugar

Remove the crowns from the strawberries and slice the strawberries into slices. Grate the yellow skin of the lemon and squeeze out one half.

Mix the strawberries with 1 tbsp lemon juice. Beat in a measuring cup the eggs with the milk, lemon zest, honey and salt.

Heat a knob of butter in a non-stick frying pan and pour a quarter of the egg mixture into the pan.

Bake the omelette until the top is almost dry. Keep covered warm on a plate and bake 3 more omelettes.

Spread each omelet thick with cream cheese. Cover one half with strawberries and fold the omelette double.

Strain the mashed sprinkles over the omelette. Bon appétit! .
