Hot-melt croquettes

Heat a frying pan without oil or butter and fry the bacon in 5 min. Until crispy. Scoop out of the pan and leave to cool on a plate.

Clean the apples, cut the unpeeled apples into quarters and remove the core. Cut the flesh into cubes of ½ cm (brunoise).

Melt the butter in the frying pan and fry the apple cubes over medium heat for 2 minutes. Remove from the pan and leave to cool on a plate.

Split the eggs (the protein is not used). Mix the egg yolks, bacon and apple with the mashed potatoes.

Form with moist hands croquettes (about 8 x 3 cm) of the puree. Put them in the freezer for 30 minutes to stiffen.

Heat the frying oil to 180 ° C. Beat the eggs in a deep plate, put the flour in another deep plate and the in a third plate.

Bring the croquettes in succession through the flour, the egg and the panko. Fry in about 3 minutes until golden brown. Serve the sriracha sauce separately.
