Dab the chicken well with kitchen paper.

Place the chicken in the baking dish and rub the skin with the butter.

Sprinkle the chicken around with coarse (sea) salt, pepper and rosemary needles.

Put a few peeled cloves of garlic into the cavity of the chicken and place the rest of the peeled cloves of garlic in the oven dish.

Divide the olives over the dish and pour in the beer.

Cover the baking dish with aluminum foil and cook the chicken for about 1.5 hours in the middle of the oven.

Remove the foil after 1 hour of cooking time and fry the chicken for another 30-40 minutes.

Brush the chicken in between with the frying liquid from the oven dish.
