Directions

  1. Mix 125 grams of flour with the sugar and finely ground walnuts.
  2. Add the egg yolks, butter and 2 tablespoons of ice cold water and knead with the mixer or by hand into a smooth dough.
  3. Grease the pie shape. Roll out the dough on a floured surface and coat the cake mold with it.
  4. Prick the bottom with a fork and leave the dough covered in the mold for about 30 minutes in the refrigerator.
  5. Preheat the oven to 200ºC.
  6. Place a piece of baking paper on the dough base and fill with the baking tray filling.
  7. Bake the dough bottom for 14-15 minutes in the middle of the oven.
  8. Remove the filling and the baking paper and bake the bottom for another 10 minutes. Allow to cool.
  9. Mix the mascarpone with the orange zest and juice.
  10. Divide the mascarpone over the cake base and place the slices of kiwi on it.
  11. Heat the marmalade and brush the kiwi with it.
  12. Garnish the cake with the remaining walnuts.
