Heat the olive oil and fry the shallots with the sage in soft and light brown for about 4 minutes.

Add the pieces of fig and the port and simmer for 5 minutes. Season with salt and pepper.

Cut the lamb chops into a piece with a small sharp knife to create a cavity.

Sprinkle the chops from inside and outside with salt and pepper and fill them with the figs. Stick the opening with a skewer.
