Lamb chops with honey and roasted roots

Preheat the oven to 180 ° C.

Slice the anchovies, garlic and the mint leaves. Mix with the oil and season with salt and pepper.

Spoon with the chops and leave to marinate on the counter for 30 minutes. Meanwhile, stir the thyme from the twigs.

Mix the thyme with honey, oil, vinegar and chilli rings. Season with pepper and salt.

Cut the roots into 1½ cm sloping pieces. Mix with the honey marinade and spread over a baking sheet covered with parchment paper.

Roast in the oven for about 30 minutes. Change every 10 min.

Heat the grill pan without oil or butter and grill the lamb chops for 5 minutes. Turn halfway. Leave to rest for 5 minutes.

Meanwhile cut the rest of the fresh mint fine. Sprinkle the chops with the fresh mint and serve with the carrot.
