Meal salad with smoked mackerel and watermelon

Finely chop the oregano.

Cut the olives into quarters.

Halve the pomegranate, press 1 half on a citrus press and scoop seeds from the other half.

In a bowl, beat the pomegranate juice with the olive oil, oregano, some salt and freshly ground black pepper to make a dressing.

Clean the mackerel: remove the head and skin and take the fish meat into large pieces of the bone.

Cut the watermelon into pieces and cut the flesh out of the peel.

Cut the flesh into cubes and mix them in a bowl with half of the dressing.

Wash the lettuce, dry the leaves (in a salad spinner) and tear them into pieces.

Spread the lettuce and arugula over deep plates and spoon the watermelon salad.

Put the pieces of mackerel on top and sprinkle the olives and capers over them.

Sprinkle the remaining dressing over it.

Serve with baguette.
