Sprinkle the meat around with salt and pepper and let alone until further use.

Season the feta with a fork and season with the lemon zest, a tablespoon of juice and some coarsely ground pepper.

Divide the feta over the lamb fillet strips and roll them loosely or fold them double. Secure them with a stick or a piece of rope.

Heat the oil with the butter. Roll the rolls through the thyme leaves and roast them at medium height in about 7 minutes around brown.
