Directions

  1. Heat the oil and fry the onion with the curry paste glassy.
  2. Add the coconut milk, 200 ml water and the pumpkin cubes and simmer for about 20 minutes at a low setting.
  3. Meanwhile, cook the rice.
  4. Add the kale to the curry and cook for about 5 minutes.
  5. Sprinkle the curry with the coriander and cashew nuts and serve with the rice.
