Heat the oil and fry the onion with the curry paste glassy.

Add the coconut milk, 200 ml water and the pumpkin cubes and simmer for about 20 minutes at a low setting.

Meanwhile, cook the rice.

Add the kale to the curry and cook for about 5 minutes.

Sprinkle the curry with the coriander and cashew nuts and serve with the rice.
