Directions

  1. Roast the pine nuts in a frying pan without butter or oil until golden brown. Let cool on a plate.
  2. Meanwhile, whisk the vinegar with the oil in a bowl. Add pepper and possibly salt.
  3. Cut the spring onion into rings.
  4. Mix the lamb's lettuce, spring onions and the dressing in a bowl and spread over 4 plates.
  5. Divide the goat cheese, raspberries and pine nuts over the lettuce. Tasty with crusty bread (but then this dish is no longer gluten free).
