Leek tart with mascarpone
Quiche with ham, leek, mushrooms, old cheese, egg and mascarpone.

Preheat the oven to 220 ºC.

Let the puff pastry thaw.

Grease the quiche mold and cover with the puff pastry.

Cut the leeks in half lengthwise and wash them under running water. Then cut the leek into rings.

Boil the leeks for 7 minutes in water with salt.

Clean the mushrooms with kitchen paper and cut into quarters. Heat the butter in a frying pan and fry the mushrooms for about 5 minutes.

Beat the mascarpone with the cream cheese, old cheese and the egg.

Cut the ham into cubes. Add the leeks, mushrooms and ham cubes. Season with salt and pepper.

Spoon the mixture into the quiche mold and fry the leek tart in the middle of the hot oven in 40-45 min. Golden brown and done.
