Pumpkin couscous from the oven


A nice Mediterranean recipe. The vegetarian main course contains the following ingredients: orange, pumpkin, couscous, green and black olives (seedless, chopped), olive oil, almond shavings (55 g), white cheese cubes, fresh coriander ((15 g) and finely chopped).

Directions

  1. Clean the orange and the pumpkin.
  2. Grate the orange peel off and squeeze out the fruit.
  3. Cut the pumpkin into pieces and remove the seeds.
  4. Preheat the oven to 200 ° C.
  5. Mix the couscous with the orange juice and zest, the olives, 3 tbsp oil and salt and pepper and put it in an oven dish.
  6. Pour 500 ml of boiling water on top, stir and cover with foil.
  7. Spoon the pumpkin parts on half of the baking sheet, drop 3 tbsp of oil and sprinkle with salt and pepper.
  8. Place the couscous dish next to it and let it simmer for 30 minutes and the pumpkin for 40-45 minutes.
  9. Roast the almonds in a dry frying pan until golden brown and leave to cool on a plate.
  10. Crumble the feta.
  11. Remove the couscous from the oven after 30 minutes, remove the foil and sprinkle the cheese over it.
  12. Heat the couscous with the cheese for another 5 minutes in the oven.
  13. Serve the couscous with the pumpkin and sprinkle with the almond and coriander..
