Cook the leeks in salted water for about 5 minutes. Halve the pieces in length and place them in a flat dish with the cutting edge facing up.

Beat a vinaigrette of the mustard, honey, white balsamic vinegar and olive oil. Season with salt and freshly ground pepper. Pour this over the leek and sprinkle with the fresh herbs.
