Leeks with brine and sage butter


A tasty Dutch recipe. The main course contains the following ingredients: meat, chicken broth (homemade or of 2 tablets), leeks (in pieces of 10 cm), butter (melted), sage (finely chopped), eggs and brine (slightly thicker cut).

Directions

  1. Bring the chicken broth to the boil.
  2. Cut the green of the leeks and halve them. Cut the pieces of leeks into the middle and rinse the sand from the pieces of leek under the tap. Put them in the hot stock and let them cook over a low heat for about 10 minutes.
  3. Meanwhile, boil the eggs hard in about 8 minutes. Let them scare under cold water. Peel the eggs and halve them in the length. Melt the butter in a pan and stir in the sage and salt and pepper to taste.
  4. Place the slices of salted meat folded side by side in an oven dish. Pour the boiling broth from the leek over the ham and let the ham in the broth warm up.
  5. Spread the leek over 4 warm plates, lay the salted meat and the eggs against it and scoop the butter over it. Serve immediately.
