Mix the flour with the lemon zest, yeast and sugar in a bowl. Pour the milk into it and finally the egg. Stir everything well to a smooth batter.

Cover with cling film and allow to rise for an hour at room temperature.

Heat the honey while stirring with the lemon juice and let it cool down immediately.

Spoon the leavened batter a few times. Heat the baking product and always put 3 or 4 pans in the pan (this is very easy with an ice scoop).

Let the fatties bake at low setting until air bubbles appear on the surface and then turn them over with a skimmer.

Keep them warm on a plate above a pan of boiling water. Serve the thickets with the lemon honey.
