Spinach salad with orange and bluefront cheese
A tasty recipe. The vegetarian lunch contains the following ingredients: pine nuts, hand oranges, gorgonzola ((cheese), diced), olive oil, red onion and ready-to-eat spinach.

Roast the pine nuts in a dry frying pan until golden brown.

Let them cool down on a plate.

Cut the peel and the white skin of the oranges.

Cut the segments above a large bowl between the fleece and collect the juice.

Add 1/3 of the gorgonzola and all olive oil to the orange juice and beat everything with a whisk to a dressing.

Season with salt and (freshly ground) pepper.

Cut the onion into thin slices.

Spoon the spinach, the onion and half of the orange slices through the dressing.

Divide the spinach salad over four plates and sprinkle the pine nuts over it.

Place the rest of the orange pieces and the pieces of gorgonzola on top and serve immediately..
