Cut with a knife or with a small shape cut out hearts from the bread. Heat the oven grill and grill the bread hearts on both sides until golden brown and crunchy.

In the meantime, whisk the eggs with the milk in a bowl. Season with salt and pepper.

Heat the butter in a frying pan and allow the spinach to shrink. Add the toast and warm briefly. Pour the egg mixture into the pan, add the chives and fry the eggs while stirring.

Take the pan from the heat source when the eggs are almost completely solidified (they may still be a little liquid here and there).

Brush the bread hearts with the herb cheese. Spoon the scrambled eggs on the bread hearts and put a slice of smoked salmon or ham on top.
