Preheat the oven to 200 ° C.

Divide the cake molds over the cavities of the muffin mold.

Cook the macaroni according to the instructions on the package. In the meantime, cut the cauliflower into florets and cook for 4 minutes.

Meanwhile, grate the cheese. Drain the cauliflower and puree with the hand blender until smooth.

Melt the butter in a thick-bottomed pan over low heat. Mix in the flour and leave for 3 minutes (roux).

Add the milk in shoots while stirring. Add the next shoot only when the previous one has been recorded (bechamel).

Mix the cauliflower puree with the béchamel sauce and add 2/3 of the cheese and the eggs. Season with the nutmeg, pepper and salt.

Cut the chicken fillet into strips. Mix the macaroni and chicken with the cauliflower cheese sauce.

Divide the mixture over the cake molds and sprinkle with the rest of the cheese.

Fry the mac 'cheesemuffins in the middle of the oven in about 15 minutes until golden brown. Take out of the oven.

Remove the cake molds from the muffin cavities and serve. Yummy! .
