Place the mackerels side by side on a dish and unfold the skin.

Cross the tomatoes at the bottom. Heat a grill pan. Brush the zucchini slices with olive oil and toast them on both sides.

Scoop the zucchini out of the pan and roast the tomatoes covered with olive oil.

Heat the orange juice and cook it in half.

Beat, from the heat source, the rest of the olive oil, mustard, salt, pepper and chives through it.
