Mousse of mango with lime, long fingers and vanilla.

Peel the mango thinly. Cut the flesh into slices along the pit. Keep 1 slice of mango apart and puree the rest with the lime juice into a smooth sauce.

Spoon half of the sauce into a bowl. Cut open the vanilla pod and scrape out the marrow. Spoon the cottage cheese and marrow through the mango sauce.

Mix the whole into an airy mousse in the food processor. Put half of the mango mousse in the slices. Spoon half of the mango sauce.

Divide the rest of the mousse and sauce over it. Cut the retained mango slice into 4 bars. Garnish the dessert with a long finger and a bar of mango.
