Cut the cake into small dice. Peel the mango, cut the pulp from the pit. Cut the flesh into as large cubes as the cake.

Keep some pieces of cake behind and divide the rest over water glasses. Put the cubes of mango on top and spoon over clotted cream. Garnish with retained cubes of cake and icing sugar.
