Directions

  1. Halve and peel the mango, remove the kernel and cut the flesh into cubes or chunks.
  2. Drain the pineapple and collect the juice.
  3. Heat 1/2 dl pineapple juice with rum, butter, vanilla sugar, ginger powder and half of the caster sugar and boil it slightly.
  4. Pour in the fruits and place a slice of pineapple in 4 ovenproof dishes.
  5. Divide the mango about it.
  6. Beat the cooking cream slightly and scoop it with the lemon zest through the sour cream.
  7. Divide this mixture over the fruits in the baking trays.
  8. Sprinkle the rest of the brown caster sugar over it.
  9. Put the desserts under a hot grill for a while until the sugar is melted and slightly caramelized.
  10. Stay with them so that they do not get too dark.
  11. Serve them immediately with a glass of tequila or dessert wine, for example.
