Heat the oven grill. Halve the peppers and remove the seeds. Place them under the hot oven grill and let them blacken. Remove them from the grill and put them in a bag that you seal or a bowl that you seal with preserving foil. After a minute or 5 you can remove the skin from the peppers.

Cut the peppers into broad strips and drizzle the pepper bars with olive oil. Divide the garlic, chopped fresh fresh mint and wine vinegar or lemon juice. Leave to marinate in the refrigerator for 2 hours.
