Mix the olive oil with the chili and thyme. Put the feta in a bowl, pour the herb oil over and let it marinate for 15 minutes.

Place the block of feta on a piece of aluminum foil, and grill in about 5 minutes until it is slightly soft.

Carefully put the feta back in the remaining olive oil and sprinkle the olives and parsley over it.

Grill the pita bread all around crispy on the barbecue. Cut them into dots and serve with the marinated feta.
