Cook the rice al dente according to the instructions on the package and allow to cool completely (outside the refrigerator).

Beat the lime juice with three tablespoons of oil, the fish sauce, the pepper and the garlic and stir through the roast beef. Let the meat marinate for a few hours and turn it occasionally.

Dab the meat dry and store the marinade.

Heat two tablespoons of oil and fry the roast beef and rosé in about 10 minutes.

Add the marinade with a few tablespoons of water and let it fry for a few more minutes. Let the meat rest for a while and then cut it into thin slices.

Heat two tablespoons of oil in a stirring stir fry the red onion and rice briefly until the rice is just hot enough to serve.

Spoon the herbs quickly and serve immediately with the meat and gravy.
