A tasty Italian recipe. The vegetarian dessert contains the following ingredients: pistachios (peeled), eggs, sugar, butter (melted), self-rising flour (sifted), baking powder, orange (scrubbed and grated and pressed), saffron and icing sugar.

Directions

  1. Roast the pistachios briefly in a dry frying pan and grind them fine (keep 12 nuts behind).
  2. Split 3 eggs.
  3. Mix the egg yolks in the food processor with the 2 whole eggs and 100 g sugar until a frothy whole.
  4. Mix the butter through.
  5. Stir in portions the ground pistachio nuts, the self-rising flour, the baking powder, half of the orange zest and a pinch of salt through it.
  6. Preheat the oven to 175 ºC.
  7. Beat the egg whites stiffly with a pinch of salt, gradually add the rest of the sugar.
  8. Spat the protein through the pistachio mixture, put it in the molds and bake it in the oven for 20-25 minutes.
  9. Remove the muffins from the mold and let them cool.
  10. Soak the saffron in 2 tablespoons of water.
  11. Stir in 1 tbsp orange juice and the saffron (including soft liquid) through the icing sugar and spread the glaze over the muffins.
  12. Garnish the muffins with the rest of the orange zest and put a pistachio on each muffin..
