Boil the rice according to the instructions on the package. Drain and let the rice cool quickly by turning it into a large bowl.

Stir the mayonnaise with a little water into a liquid dressing and season with salt and pepper.

Cut the cucumber into half slices and the onion into thin rings. Halve the tomatoes and drain the capuchins. Cut the cheese into strips.

Spoon the rice in the bowl with the cucumber, tomatoes, onion, capuchin, lettuce, cheese and dressing. Serve the salad in plates or bowls.
