Coconut Soup
A healthy Oriental soup for one person: you do not want to share it

Ingredients
- 1 root in thin slices
- Pak choi in pieces
- 5 centimeter fresh ginger peeled
- Red pepper without seeds
- 3 toes garlic
- 3 bunch onions in rings
- 1 tablespoon sunflower oil
- 400 milliliters vegetable stock
- 150 milliliters coconut milk
- 1 hand Chinese noodles
- Salt
- Pepper
- 1 tablespoon unsalted peanuts
Kitchen Stuff
Directions

Puree ginger, red pepper and garlic in the food processor (or cut everything very finely).

Heat the oil in a soup pot and fry the ginger mixture for 2 minutes.

Add the stock, the coconut milk and the carrot and cook the soup with the lid on low heat for 10 minutes.

Then add the pak choi, the spring onions and the vermicelli and let everything simmer for another 2 minutes.

Season with salt and pepper. Serve in a large bowl and sprinkle the peanuts over it.
