Meringues with mango and pistachio nuts
A tasty recipe. The vegetarian dessert contains the following ingredients: eggs (at room temperature), fine sugar, lemon juice, cornstarch, unsalted pistachios (peeled (baking compartment, 55 g)), honey, saffron (from an envelope), mango (washed and in 8 thin slices) , sorbet ice cream (mango (deep-freeze and bake at 500 ml)).

Preheat the oven to 125 ° C.

Separate the eggs and whisk together the proteins in a fat-free bowl with a mixer (the egg yolk is not used in this recipe), add the sugar and 2 tbsp lemon juice in portions.

At the end, when the protein has almost stiff peaks, add the cornstarch and mix until it is completely absorbed.

Spoon the egg white foam into the griddle in 4 large pits and put them on the bottom shelf in the oven for 1 hour.

Then switch off the oven and allow the meringues in the oven to cool down completely.

Roast the pistachios for 3 minutes in a dry frying pan, let them cool down on a plate.

Heat the honey in the microwave for 20 seconds and stir with the rest of the lemon juice and saffron.

Place each meringue on 2 slices of mango, pour the honey mixture over it and sprinkle with the pistachio nuts.

Serve with a ball of mango sorbet ice cream..
