Miniquiches with bacon and green asparagus tips
Small quiches of bacon strips, puff pastry, gruyere, eggs, mustard, tarragon and green asparagus.

Preheat the oven to 180 ° C.

Heat a frying pan without oil or butter and fry the bacon strips in 5 min. On medium heat until crispy. Remove from the pan and drain on kitchen paper.

Meanwhile, divide the puff pastry into a square per portion and coat the cavity molds with it.

Grate the cheese. Beat the eggs and mix with the mustard, tarragon, crème fraiche and half of the cheese.

Halve the asparagus. Spread the bacon and asparagus over the puff pastry and pour the egg mixture on it. Sprinkle with the rest of the cheese.

Bake for about 25 minutes in the middle of the oven until golden brown and done. Cover after 20 min loosely with aluminum foil if the quiches become too dark.

Remove from the oven and leave in the mold for 5 minutes. Take the quiches out, lay on a large scale and spread the lamb's lettuce around it.
