Beat the eggs in a bowl. Add the basil, chives, lemon zest, juice and a pinch of salt.

Heat the oil in a frying pan with a thick bottom and fry 3 thin omelettes.

Let the omelettes cool down, spread the feta over them, roll them up tightly and wrap them in foil.

Let the rolls stiffen in the refrigerator for at least 2 hours and then cut into small rolls.
