Directions

  1. Beat the egg yolks creamy and smooth with a pinch of salt, the honey and crème fraîche.
  2. Beat the egg whites stiffly with a pinch of salt and gently spoon them through the yolk mixture.
  3. Heat the butter in a large frying pan with non-stick coating. Pour in the egg mixture and leave with a lid on the pan in about 5 minutes of cooking on the lowest setting.
  4. Turn the omelette over with the lid or a large plate and bake the other side gently for a few minutes.
  5. Divide the goat cheese and almonds over the omelet and fold it double if necessary.
