Beat the eggs in a large bowl with milk, salt and pepper. Heat the oil or butter in a large frying pan with non-stick coating and pour in the whipped eggs.

Allow to cook for one minute at medium height and then turn the heat source down.

Place the salmon on the omelette and place a lid on the pan. Let the egg completely solidify.

Beat the ricotta with the dill and the lemon and season with salt and pepper.

Divide the ricotta over the middle of the omelet and fold it double. Cut the omelette into pieces and serve immediately.
