Onion Quiche
Hearty cake with puff pastry, onion, egg, crème fraîche, goat cheese and thyme.

Preheat the oven to 200 ºC. Ris the leaves of the sprigs of thyme.

Cut the onions in half rings and the garlic fine.

Heat the butter in a frying pan and fry the onions with the thyme leaves and garlic in a low heat for 30 minutes and until done.

Season with pepper and salt. Allow to cool slightly.

Meanwhile, grease the spring form with the oil and cover with the puff pastry. Prick holes in the bottom and bake for about 10 minutes in the middle of the oven.

Take the mold out of the oven and lower the temperature of the oven to 180 ºC.

Beat the eggs in a large bowl with the crème frâiche.

Spoon the onions on the puff pastry floor, crumble the goat cheese on top and pour the egg angel over it.

Place the rest of the thyme in the middle and fry the quiche in about 35 minutes until golden brown and done.
