Orange biscuits with blackberries and balsamic vinegar
Knead a dough of the flour, the caster sugar, vanilla sugar, 1 egg, olive oil, orange zest and 2-3 tablespoons of orange juice. Wrap the dough in cling film and put in the refrigerator for about 30 minutes.
Preheat the oven to 180 ° C. Sprinkle the worktop with flour and roll out the dough into a thin piece of paper that is no more than 3 mm thick. Put rounds out of the dough and place them on the baking sheet.
Beat the remaining egg and brush the dough with it. Bake the cookies in the oven for about 15 minutes until golden brown and done.
Allow to cool and distribute the jam.
Mix the blackberries with the balsamic vinegar and spread over the biscuits.
Sprinkle lightly with icing sugar and serve immediately.
