Preheat the oven to 100ºC.

Cut the cucumber, celery and paprika into thin strips and scoop in a bowl with the carrot and chives. Mix the dressing and let it stand.

Beat the pancake mix with the milk and mix the eggs one by one to a smooth batter. Add the oregano, a pinch of salt and some pepper.

Heat a little baking product in a large frying pan. Pour a full ladle of the batter into the pan and fry the pancake on both sides until golden brown. Keep warm in the oven and bake 7 more pancakes.

Put the pancakes on a plate and add a few spoonfuls of raw vegetables. Divide some feta over it and roll the pancakes loosely. Serve immediately.
