Pancake serpent cake


Quick surprise for sinterklaas for a fan of pancakes: a stack of pancakes as a surprise with a present.

Directions

  1. Sift the flour with the salt over a large mixing bowl.
  2. Add the eggs and half of the milk and beat with a whisk until smooth. Pour in the rest of the milk and whisk again smoothly.
  3. Cover the bowl with cling film and let the batter stand for 30 minutes.
  4. Heat a knob of butter in a 20 cm diameter frying pan and put in a ladle of batter. Turn the pan around so that the whole bottom is covered.
  5. Let the pancake bake for 2 minutes on medium heat until the top is dry and the bottom is golden brown. Turn the pancake over and cook for another 1 min.
  6. Repeat with the rest of the batter (total will be about 20 pancakes). Use 2 pots if necessary, that's how it goes fast.
  7. Keep 2 pancakes separate. Sprinkle the rest of the pancakes each with a thin layer of icing sugar and stack them.
  8. Cut a square of 7 cm x 7 cm in the pancake stack. Keep the squares separate.
  9. Place the stack on the wrapping foil. Place the gift in the cut square. Cover the pile with the two separate pancakes.
  10. Sprinkle the pile with all the candy.
  11. Pack the stack with the wrapping film. Tie a nice ribbon around it.
  12. Give the cake as a gift and sweeten the cut pancake squares yourself.
