Beat the flour with the milk until there are no more lumps in the batter and beat the eggs one by one. Add a pinch of salt and let the batter rest for a while.

Let the skillet get hot and brush with a little butter. Pour a spoonful of batter into the pan and turn the pan around to distribute the batter well. Fry the flange at medium height on both sides until golden brown and crispy and let it slide on a plate. Bake 7 more flanges of the batter and allow to cool.

Divide leaves of arugula and slices of salmon over the pancakes. Beat the sour cream with the horseradish and dill and drizzle over the pancakes.

Fold them twice loosely twice and put 2 pancakes together on a plate.
