If necessary, cut the inner core from the chicory stalks and cut the praise into slanted strips.

Roast the walnuts in a dry hot frying pan.

Mix all ingredients for the dressing. Add half of the nuts and half of the blue cheese.

Scoop the dressing through the chicory strips and divide a small pile over 4 plates.

Divide the slices of pear over them and sprinkle with the rest of the nuts and blue cheese. Tasty with baguette.
