Finely chop an orange and grate a tablespoon of the peel.

Cut the skin of both oranges all the way down to the flesh and cut the segments between the membranes. Mix the segments with the ginger, orange zest and honey and set aside.

Divide a spoonful of batter into the pan by turning it around and fry over medium heat on one side until the top is dry. Turn the flange over and bake for another minute.

Spread the orange-ginger sauce over the crêpes and fold them twice double.
