Preheat the oven to 200 ºC.

Divide the fish into equal portions and sprinkle with freshly ground pepper and salt.

Put a sprig of rosemary on each piece of fish.

Wrap each portion in two slices of Serrano ham. Drip the olive oil over it.

Grease the oven dish. Place the fish in the oven dish with the seam of the ham.
